Lemon Lush Energy Bites

These no bake lemon lush energy bites are perfect to have as a quick and healthy snack or dessert! They can also be enjoyed before or after a workout! They’re packed with coconut flour, coconut butter, dates, protein powder, MCT oil, unsweetened coconut, lemon, and a splash of almond milk! 

This recipe is inspired by my sweet Grandma. Once spring and summer rolled around back home, she would always make us Lemon Lush! Lemon Lush is similar to lemon squares, but in cake form. It’s SO good and was one of my family’s favorites! 

I created these Lemon Lush Energy Bites recipe last year to put a healthier spin on my Grandma’s famous Lemon Lush! They’re the perfect mix of spring and summer flavors. These bites came out better than I expected. I knew they were going to be good, but not THIS GOOD. They taste like little bites of lemon cakes rolled in coconut heaven. The dates in this recipe give a nice touch of sweetness and the MCT oil provides a great source for quick energy!

One of my favorite parts about these no bake energy bites is that they are super easy to make and can be prepared in minutes! Just blend all of the ingredients together in the food processor, then roll in shredded coconut!

Lemon Lush Energy Bites

These no bake lemon lush energy bites are the perfect quick and healthy snack or treat! They’re packed with coconut flour, coconut butter, dates, protein powder, MCT oil, unsweetened coconut, lemon, and a splash of almond milk!

Ingredients

  • ¼ cup coconut flour
  • 2 tbsp coconut butter
  • ½ cup pitted dates
  • ¼ cup vanilla protein
  • 2 tbsp MCT Oil
  • Juice from one lemon (about 2 tbsp lemon juice)
  • Splash of almond milk
  • Unsweetened coconut for rolling

Instructions

  1. Place all of the above ingredients in the food processor (except the unsweetened coconut) and blend!
  2. Pour coconut into a bowl. Roll dough into balls then roll each one in the coconut
  3. Place balls on a cookie sheet and refrigerate for ½ hour
  4. Store in airtight container in refrigerator for up to 1 week or in the freezer! Enjoy!
