Happy National Donut Day! Woahooo! Today I’m celebrating with this super easy protein donut recipe! I’m not much of a donut fan to be honest because I need to eat like 5 to fill me up. I love this recipe because it’s packed with protein and coconut flour. Coconut flour is high in fiber, protein, and healthy fats so it helps to keep me full all morning long.
This recipe is SO easy to whip up! To make the peanut butter glaze, add the peanut butter and coconut oil into a small glass bowl. Heat for 20-30 seconds, or until coconut oil is completely melted then stir. If the glaze is too liquidy, add more peanut butter to thicken then carefully dip the donut into the glaze, top with more chocolate chips & a dash of sea salt. Enjoy!
Peanut Butter Glazed Protein Donuts
These peanut butter glazed protein donuts are packed with protein and coconut flour to keep you full all morning long! They’re such a yummy but healthy sweet treat to start your day with!
Ingredients
- ¼ cup coconut flour
- ½ tsp baking soda
- 2 tbsp chocolate plant-based protein
- 1 tbsp cacao powder
- Dash of sea salt
- 1 egg + 2 egg whites
- ⅓ cup honey
- ¼ cup creamy PB
- 1 mashed banana
- handful of dark chocolate chips
- coconut oil spray
Peanut Butter Glaze:
- 1 tbsp coconut oil
- 2 tbsp creamy PB
Instructions
- Preheat the oven to 350 degrees and spray a donut pan with coconut oil spray.
- In a bowl, mix together the dry ingredients (coconut flour, sea salt, protein powder, Cacao powder, baking soda, & handful of dark chocolate chips). Then add in the wet ingredients (mashed banana, eggs, honey, & ¼ cup peanut butter).
- Once the batter is mixed well, place it in a plastic storage bag and cut the tip off. Pipe the donut batter into each of the donut molds.
- Bake at 350 degrees for 15 mins or until golden brown.
- Let the donuts cool in the pan for a few minutes, then place on wire rack to cool a little more before adding the glaze.
- For the glaze, add the PB and coconut oil into a small glass bowl. Heat for 20-30 seconds, or until coconut oil is completely melted then stir it together. Carefully dip the donut into the glaze, top with more chocolate chips & a dash of sea salt. If glaze is too liquidy- add more peanut butter to thicken.
