Chocolate Brownie Overnight Oats

Dessert for breakfast?! Yes please!! I’m talking healthy dessert though! My Chocolate Brownie Overnight Oats are the perfect way to start the day! They’re packed with protein and carbs to make the perfect morning fuel on-the-go!  

I’m a big fan of overnight oats! They’re my go-to for busy mornings during week. They travel well and only take a few minutes to prepare the night before. When I moved to California almost 6 years ago I started focusing on eating better and exercising more. It was so much easier to live a healthier lifestyle out here where healthy food was more accessible and it was nice outdoors year round. I started focusing more on my nutrition. Instead of having a just granola bar on the way to work I had overnight oats to fill me up and hold me over. As a nurse you never know when you’re going to get your morning breakfast or lunch break so I always made sure to fill up before heading to the hospital. 

Overnight Oats were always my go- to for my workdays because they kept me full and satisfied for most of the morning thanks to the carbs, protein, and healthy fats. When I first started making overnight oats, I just made a traditional recipe. Overtime I started playing with flavors and making different combinations. I started prepping my both Banana Bread Overnight Oats and Chocolate Brownie Overnight Oats so that I would have a little variety for the work week!

My Chocolate Brownie Overnight Oats recipe seriously tastes like brownie batter dessert for breakfast. I love starting my day with something sweet, but good for you! This recipe is filled with carbs from the oatmeal, protein from the chocolate protein and greek yogurt, and healthy fats from the peanut butter on top to make the perfect well-rounded breakfast!

Recipe Adjustments:

Personally I like my overnight oats nice and thick! But if you prefer them not as thick, feel free to add more milk. Also, I used cacao powder in my recipe but cocoa powder works too. For sweetener you can either use stevia, maple syrup, or honey- whichever you prefer or have at home. Sometimes if I want to switch up this recipe a bit I add peanut butter to the mixture as well, which adds healthy fats and a nutty taste. Peanut butter brownie oats? Yes please!

Toppings:

My favorite toppings for this recipe include: banana slices, chocolate chips or cacao nibs, and melted peanut butter! I also love switching it up and adding strawberry slices and sunflower seed butter. The sunflower seed butter with the chocolate oats makes for a tasty sweet and salty combo!
