Sunflower Seed Butter Cups

These sunflower seed butter cups are the perfect treat to satisfy your sweet tooth! They can be enjoyed as an afternoon snack or after dinner dessert!

Sunflower seed butter is my favorite alternative to peanut butter. I’m not really a fan of almond butter so I usually reach for cashew butter or sunflower seed butter. Sunflower seed butter is just the perfect blend of sweet and salty! I love adding it to my morning oatmeal bowls, snacking on it with an apple, or using it in a healthy dessert recipe!

Last year I was hitting up Whole Foods almost every week to buy Justin’s White Chocolate Peanut Butter Cups. I decided that my obsession with them was getting a little out of hand, so it was time to make my own! After trying every combination- white chocolate with peanut butter, almond butter, cashew butter, and sunflower seed butter I decided that the sunflower seed butter was my favorite!

I have a major sweet tooth and usually reach for something sweet after lunch or after dinner every night. I try to keep it on the healthier side though. At times I do enjoy a cup of real ice cream (Moose Tracks is my favorite) or a Reeses Peanut Butter cup, but I try to keep my snacking on the healthier side for the most part!

These sunflower seed cups are made with few ingredients and are definitely healthier than your typical peanut butter cup! You can substitute the white chocolate for dark chocolate if you would like to make them even healthier! You can also use any type of nut butter you prefer- I just love the white chocolate and sunflower seed butter combo!

I usually stash my sunflower seed butter cups in the freezer when they’re done! They can go in the fridge too, but I prefer for them to last a while! Sometimes I forgot they’re even in the freezer, but when I do remember- they’re a nice little surprise to find!

Sunflower Seed Butter Cups

Ingredients

Chocolate—

  • 16 oz. white chocolate
  • 1 tbsp melted coconut oil
  • sea salt for topping

Sunflower seed butter—

  • 1 cup sunflower seed butter
  • 1 tbsp melted coconut oil

Other-

  • Muffin tin
  • Muffin liners

Direction

  1. Place chocolate and coconut oil in a microwave safe bowl. Melt chocolate in microwave (every 30 seconds- stir until it becomes a liquid).
  2. Once the chocolate is melted, place 1 tbsp of chocolate mixture in muffin tins lined with muffin liners. Place the muffin tin in the freezer for 10 mins or more.
  3. While chocolate layer is freezing- add coconut oil and sunflower seed butter in mixing bowl and combine.
  4. After the chocolate layer has been in the freezer for at least 10 mins, remove and add sunflower seed butter mixture. Place in freezer for 10 mins.
  5. Add remaining melted chocolate. Be sure to cover the sunflower seed butter mixture.
  6. Top each cup a sprinkle of sea salt.
  7. Place back in freezer for 10 minutes.
  8. Store in airtight container in the fridge or freezer! Enjoy!
