With the weather finally warming up, I’ve been craving all the summer food. Of course our grill isn’t working right now, but I figured why not make BBQ inspired food to satisfy my craving?
This summer pasta salad dish is made with fresh veggies, tossed with a light homemade vinaigrette dressing, and packed with protein. Eat Banza pasta is my favorite because it’s loaded with 25g of protein per serving!!! It’s so easy to make too– you’re going to want this dish at all your BBQs and picnics this summer!
Summer Pasta Salad

Ingredients
Pasta:
- 1 box Eat Banza pasta wheels
- ½ cup diced red onion
- ½ cup diced red bell pepper
- ½ cup diced yellow bell pepper
- 1 cup diced english cucumber
- 1 cup halved grape tomatoes
- ½ cup crumbled feta
Dressing:
- ½ cup olive oil
- ¼ cup apple cider vinegar
- juice of one lemon
- 1 tbsp minced garlic
- salt and pepper to taste
Instructions
- Cook pasta according to directions and drain.
- In a large bowl combine chopped onion, bell peppers, cucumbers, tomatoes.
- In a separate bowl combine dressing ingredients.
- Add pasta to veggies, then pour dressing over top and stir.
- Sprinkle with feta cheese then place in the fridge to cool. Chill until ready to serve. Enjoy!
